2 courgettes, garlic, onion, peppers, aubergine, tomatoes or passata, basil and oregano.
To do make:
2 green courgettes - 650 g
half a bulb of garlic
2 onions - 250 g
3 peppers - various colors 600 g
aubergine - 400 g
mushrooms - 200 g
2 large tomatoes - 650 g
300 g passata from a bottle - pureed tomatoes
10 tbsp olive oil
herbs: a handful each of oregano and basil
spices: a tablespoon of salt, sweet paprika, and smoked paprika, and a teaspoon of pepper
Fry the garlic and onion for about 10 minutes, add the chopped peppers. After, add the rest together with the herbs. After 20 minutes, passata or tomatoes and a tablespoon of salt, sweet paprika and smoked paprika and a teaspoon of pepper. Let it cook gently, stirring occasionally until the vegetables are tender, you can add water if it is thick.
