Parsley, mint, lettuce, coriander, cucumber, tomato, garlic, lemon, chives, onion, semolina or quinoa or rice.
Just looks complicated, promises.
To make:
- Boil the Quinoa or Rice
- 2 bunches of parsley - about 70g of already chopped parsley
- A handful of fresh mint leaves.
- 1 large tomato or a handful of cherry tomatoes
- 1 fresh snake type cucumber or two ground cucumbers.
- 4 tbsp chopped chives or onions.
- 4 tbsp of your favourite olive oil.
- 4 tbsp freshly squeezed lemon juice.
- 1 garlic clove - about 5 g (can be omitted).
- 1 teaspoon salt.
Slice the tomatoes and cucumbers and set aside, don't forget to salt. Add to the porridge after chopping the parsley, mint and arugula or chives. Top with Oliva and lemon, and a squeeze of garlic if you like. Ready!
